Splendor in the Grass

The weather forecast is gorgeous over Memorial Day weekend, and I’m planning to soak up the sunshine by being outdoors as much as possible.  This means simple seasonal flavors that don’t require hours in the kitchen, and dishes that can be easily packed up for impromptu picnics.  Here’s what I’ll be making:

Penne with Beef & Arugula

penne with beef

It’s steak, pasta, & salad, all in one delicious & portable meal that’s great served at room temperature.  Recipe courtesy of Giada De Laurentiis, foodnetwork.com.

Caprese Salad

Enjoy this salad in the summer, when the basil is freshest and the tomatoes are just-off-the-vine.  Pure perfection, no cooking required.  Recipe courtesy of Ina Garten, foodnetwork.com.

Strawberry Shortcake

It’s a classic that everyone loves.  This recipe includes great homemade biscuits, but when I don’t have time to bake, I achieve the same flavors with fresh scones from Central Market warmed in the oven, and topped with whipped cream and strawberries.  Recipe courtesy of epicurious.com.

Meloncello

melloncello

A cool, refreshing cocktail elevates a summer get-together to party-status, and this Meloncello combines lemon liquor with watermelon for a sweet treat.  Recipe courtesy of foodnetwork.com.
