Sunday Supper {on the menu}
I love cooking dinner on Sunday night, whether having friends over for a casual get-together or enjoying a low-key evening with A. But since slaving over a stove is the last thing I want to do on the weekend, I make it a point to serve meals that come together quickly. Here’s what’s on the menu tonight:
(pictured above.) Once again inspired by Barefoot Contessa, this Lemon Fusilli with Arugula is made of bright flavors and colorful summery produce. It can be served room temp., making it perfect for whipping up before friends come over so I’m hanging out with them… instead of in the kitchen.
This Bibb Lettuce Salad has a Basil Green Goddess dressing that takes advantage of the basil abundance at the farmer’s market right now. Simple & scrumptious, it takes 5 minutes to put together. Toss with dressing right before serving.
I considered making a homemade fruit tart, but after being inspired by the gorgeous summery berries at the market, I thought: what could be better than bowls of fresh berries and creamy ice cream? I’ll throw in a crusty loaf of french bread, a citrusy bottle of Pinot Grigio, and a little espresso with dessert for a perfect weekend meal.
